perfect sunday morning: organic pumpkin bread

mañanita de domingo perfecta: pan de calabaza orgánico

 photo maminme_zps634912b7.jpg
my favorite way of letting them know how my heart swells in warm sighs for them:

you will need / necesitarás:
  • 1 1/2 cups organic whole wheat flour / 1 1/2 tazas de harina integral orgánica
  • 1 teaspoon organic salt / 1 chucharadita de sal orgánica
  • 1 cup  brown sugar / 1 taza azúcar mascabado
  • 1 teaspoon organic baking soda / 1 cucharadita polvo de hornear orgánico
  • 1 cup homemade organic pumpkin puree (room temp) / 1 taza puré de calabaza orgánico hecho en casa (a temperstura ambiente)
  • 1/2 cup organic coconut oil / 1/2 taza aceite de coco orgánico
  • 2 organic eggs (beaten) / 2 huevos orgánicos (batidos)
  • 1/4 cup water / 1/4 taza agua
  • 1/2 teaspoon cinnamon / 1/2 cucharadita canela
  • 1/2 teaspoon nutmeg / 1/2 cucharadita nuez moscada

making sweetness / creando dulzura:
  • preheat oven to 350°F / precalentar horno a 180ºC
  • in large bowl, mix together flour, salt, sugar, and baking soda / en un tazón grande, mezcla bien la harina, sal, azúcar y polvo de hornear
  • in a separate bowl combine pumpkin, coconut oil, eggs, water, and spices / en un tazón aparte combina el puré de calabaza, aceite de coco, huevos, agua y especies
  • combine "wet" ingredients with dry ingredients, do not overmix / combina los ingredientes "húmedos" con los secos, no batir demasiado
  • pour batter into a  9x5 inch loaf pan (previously greased with coconut oil or butter) / vierte la mezcla en un molde para hornear pan de 23x13 cm (previamente engrasado con aceite de coco o mantequilla
  • bake 50-60 minutes or  until a thin skewer poked in the very center of the loaf comes out clean / hornea por 50-60 minutos o hasta que un cuchillo insertado en el centro salga limpio
  • let cool on a rack then turn out of the pan / deja en friar sobre una tabla y después retíralo del molde
Note: I like using these mini loaf pans i have at home. If desired, you can bake your batter in muffin tins as well. They come out just as moist. If you use a muffin tin bake for 20-25 minutes, or 40-45 minutes when using mini loaf pans.

making your homemade pumpkin puree is easy and especially delish if you get your hands on a beautiful organic pumpkin. just chop into pieces (not an especially easy task... i sometimes just smash the old thing against the floor inside a bag or cloth), boil in water until the meat is nice and tender. let cool and then scrape the meat off the pumpkin shell into a food processor. i personally pour it all into a bowl and use my old immersion blender to make it nice and smooth. i like making a whole bunch and then freezing what i won´t be using at the moment, keeping it handy for the tons of delicious recipes that include pumkin puree!

i am happy to announce that i have been invited to be a core contributor, writing for Voices from the Ville, Kidville´s new blog. i´ll be adding a bit of my green, simple, handmade outlook on life and am silly happy to share this first post inspired by spring with all of you!

 photo DSC_0117_zps9681e961.jpg
Spring is here and so is Mr. Sun. There is no better way to celebrate than with sweet little somethings to chew on. I like to involve my children in my acrobatics in the kitchen, especially when this leads me out into the garden, as it does when sun-drying fruits. My favorite fruits to sun-dry are apples and strawberries, and although getting this sweet and happy snack done requires some waiting, it is extremely easy. All you need is dry, hot weather, a drying rack and patience. Since I use only organic fruit I enjoy having my little missy either help me pick them from our garden, or accompany me to the farmers market and let her choose them herself. This way she feels like she´s truly a part of making such sweetness for the family.

the easy-peasy-patience-taking how to:
  • wash your apples and strawberries
  • peel and core your apples (great tute on how to core apples here) then cut into slices, as thin as possible (don´t worry if your slice doesn´t come out whole), set aside
  • have the kids chop the strawberries (strawberries that are going to be sun dried are perfect for letting kids cut since they shouldn´t be thinly sliced - they get really sticky, and if they are too thin they stick to the drying rack)
  • lay your fruit out on your rack without overlapping, have the kids help (it´s sort of like putting a puzzle together)
  • set out to dry in the sun, this process could take up to a few days depending on the weather (do not leave out overnight)
  • make sure you turn your fruit over every now and then, and move the rack around so that it is directly under the sun for as long as possible
  • once you feel there is no humidity left in your fruit, store in a bottle at room temperature (you may find that not all your fruit finishes the drying phase simultaneously - some pieces may require being left out a bit longer - remember to be patient)
  • you can serve this yummy healthy snack alone, in oatmeal, or on top of cereal. Enjoy!

¡A disfrutar!

About drying racks:
At home we like to use wooden racks or my favorite bamboo tray. What´s important is that you use something sanitary and safe. You can find helpful information about food drying and drying racks here.

vegan my minestrone / mi minestrone a la vegetariana

 photo DSC_0001_zpsc06633e1.jpg

 photo DSC_0004_zps1be19e7c.jpg

I love to eat. I love comfort food. I also love simple, homemade, organic, fresh, yummy and, if possible, easy. I find that making a batch of organic beans and freezing them has made my life easier in many ways. I know right of the stove is waaay better, but sometimes my life isn´t precisely one that seems to have plopped (yes, just like poo does) out of a beautiful cookbook with gorgeous photography and a perfectly well groomed cook on the back cover. So, I have my reserve of organic, homemade freezer food for those not so stylish and under control days of my mama bear life. Yesterday (being one of those poo-poo days) I had to juggle many things, but really felt like warm comfort food and bread fresh out of the oven. So I went for diving into organic bread making and decided that´s all I could dedicate any real time to (if I didn´t want to turn into the wicked witch of the west south by the time my kids were ready for lunch). I would just have to go for my version of "fast food" for the rest of our menu. I spruced up a yummy vegan minestrone with the help of my frozen beans. Yum. Yum. Yum. And EASY.

Amo comer. Deli. Deli. Deli-cioso. Y SENCILLO.

You´ll need:
  • carrots, potatos, tomatos and celery all chopped into small squares
  • onion (just a few slices)
  • 1-2 cloves of garlic
  • beans (previously cooked)
  • fresh basil (chopped)
  • salt
  • cebolla (solo unas cuantas rebanadas)
  • 1-2 dientes de ajo
  • frijoles (previamente cocinados)
  • albhaca fresca (en pedazos)
  • sal
All you have to remember is what my dear italiana mamma says: "A good minestrone: if you can poke your spoon into it, and it stays standing, then you´re good to go." (I can never get it to be that thick, but it sure comes out yummy!). So keeping these words of wisdom in mind you want to boil water, but not too much. Take the amount of veggies and beans that are going into your minestrone into consideration. If you need more water you can always add a bit more. The other way around would be a bit tricky.

Add all your veggies to the water as well as the beans, onion and garlic cloves. Add salt (just a bit at a time, tasting as you go) and let boil for a while without covering your pot so that the water reduces and the flavors concentrate. Once your minestrone starts to acquire a creamy texture add the fresh basil and let cook for a while longer. Just let your taste buds and my mamma´s wisdom guide you. Serve hot with bread on the side and let your heart sigh.

Note: I, in no way, am a cook. What I do is respect my deep passion for experimenting and constantly searching for yummy and healthy. I have loads of fun in the process and am in love with sharing. So, with this in mind, you can all give it a go if you so desire. A´mangiare!

A´mangiare!

Apple Almond Muffins
Magdalenas de Almendra y Manzana

I was so happy when I found this recipe. Then I realized there were certain things I was not willing to compromise on (such as the Splenda), but was excited about being able to start baking with my wonderful almond flour. So I readjusted the recipe, made it healthier yet yummy and it turned out delish! My kiddos love having them for breakfast. They are so amazingly moist that we like poking a hole in the middle and filling it with organic agave honey (wish I had organic maple syrup!) and eating them up with a cup of our homemade almond milk!

Ingredients / Ingredientes:

•2 cups almond flour   / 2 tazas harina de almendra
•3 tablespoons brown sugar / 3 cucharadas de azúcar mascabado
•1 rounded teaspoon baking powder / 1 cucharadita copeada de polvo de hornear
•4 organic eggs (at room temperature) / 4 huevos orgánicos a temperatura ambiente
•1/2 cup butter, melted / 1/2 taza de mantequilla (derretida)
•1/2 cup organic yoghurt / 1/2 taza de yogurt orgánico
•1 tablespoon lemon juice / 1 cucharada de jugo de 1 limón
•1 teaspoon natural vanilla extract / 1 cucharadita de extracto natural de vainilla
•1 cup freshly diced organic apples / 1 taza manzanas orgánicas recién picaditas

Directions / Instrucciones
1. Lightly butter 12  muffin pans. Preheat the oven to 350 degrees F. / Engrasa ligeramente los moldes de magdalena con un poco de mantequilla. Pre-calienta el horno a 175 C.
2. In a medium bowl, mix together the eggs, butter,  yoghurt, lemon juice and vanilla extract (wet ingredients). In a larger bowl, mix together the almond flour, brown sugar and baking powder (dry ingredients, except for the apples).
3. Add the wet ingredients to the dry ingredients and mix until just combined (do not beat).
4. Finally add  the apples and briefly mix again.
5. Divide the mixture between the 12 muffin pans and bake for 25 minutes until risen, golden brown and set in the middle./ Divide la mezcla entre los 12 moldes y hornea por 25 mintuos hasta que hayan levantado, estén doraditas y cocidas en el medio.
6. Take out of oven and leave in the pans on a cooling rack for 5 minutes, and then loosen carefully with a knife before turning them over to cool completely.
Makes 12. / Rinde 12 magdalenas.
If you´re curious about how we make our almond milk (and our almond flour) you can find the recipe here. The only thing I do differently is I actually take the time to peel each almond after they´ve soaked over night. Call me crazy.

Photobucket

According to my kids, this is the perfect Saturday morning breakfast:

Photobucket

What I use / Lo que utilizo:

1 egg (yay for my chickens!) / 1 huevo (¡que vivan mis gallinas!)
1 slice of bread / 1 rebanada de pan
avocado / ahuacate (palta)
olive oil / aceite de olivo
salt / sal

Photobucket

If your bread is whole wheat and the crust is thick, then you can just cut the crusty top section off like I did. Grab the the lid of a herb or spice bottle, place in the middle of the slice of bread and press down. You´ll have your perfect circle outlined. I prefer to repeat this on the other side of the bread. This makes it easier to take the round piece of bread out without breaking the slice.

Photobucket

Heat a bit of olive oil in a pan (you can use butter if you prefer a more sinful version of this breakfast) and drop your circle and slice of bread in

Photobucket

Let it toast a bit and flip over

Photobucket

Let this side toast for a while as well, then crack your egg into the center. Sprinkle salt on top (my grains of salt look gigantic because I use organic bay salt)

Photobucket

Let the eggs fry until they can be turned... finish by letting the other side cook,

Photobucket

then serve with yummy avocado on top!

¡después sirve con rico ahuacate (palta) encima!

Photobucket

Bon Appetite!

Simple meal, happy belly: recipes / Comidita sencilla, pancita contenta: recetas

Photobucket

I´ve been SO happy lately. I found the perfect place to buy local, organic and love-ly! I am barely setting foot in a super market anymore. I just go to pick up a few things I can´t find anywhere else. I have achieved a great deal as far as walking away from chemicals goes (I´ll be posting about this soon). Everyday, when I make our meals, I like to step back and admire the fact that we are eating like kings.... organic loving kings... and spending less than we used to! Yesterday I made organic farro, an organic veggie and baby corn salad and homemade bread for la familia and there were no "buts", "ifs" or leftovers!

He estado TAN CONTENTA últimamente.

Photobucket

I´m even using organic salt, and instead of listening to weird music while walking through iles and iles of boxes with doubious ingredients printed in small letters, I walk through a beautiful field. I look down into baskets filled with wonderful treasures organically grown with love. And get home with my feet filed with dust and with my "mandado" bags filled with surprises. Couldn´t get any better.

So how about some easy recipies?

Así que ¿que tal unas recetas sencillas?

Veggie Baby Corn Salad
Ensalada de Verduras con Elotitos Tiernos

You´ll need:
Necesitarás:

♥ potato / papas
♥ green beans / ejotitos
♥ baby corn / elotito tierno
♥ dill / hoja de eneldo
♥ olive oil / aceite de olivo
♥ balsamic vinager / vinagre balsámico
♥ salt / sal

Chop the potatos and green beans, steam and let cool. Chop the baby corn into edible pieces. Once your veggies have cooled off, mix with the baby corn, adding the balsamic vinager, olive oil, dill and salt (start off with small amounts and taste, adding more if needed).

Farro Recipie
Receta de Farro

You´ll need:
Necesitarás:

♥ farro / trigo
♥ onion / cebolla
♥ tomato / jitomate (tomate)
♥ salt / sal
♥ olive oil / aceite de olivo

Let the farro soak in water for at least 24 hours. I let it soak for 2 days, draining and changing the water once a day. This makes it extra soft. Drain and rinse farro, then set aside. Cut onion into small pieces. Cut tomato. Set aside. Heat olive oil in a pan and fry onion until soft, mix in farro and fry together for a few minutes, mixing often. Drop in the tomato and mix well, let this cook for a few minutes more. Mix well, set on very low heat and cover the pan. Let cook for about 5-7 more minutes (or until you´ve achieved the consistancy and flavor you desire) and you´re ready for a deliciously healthy meal.

♥ For Aura / Para Aura ♥

One of my lovely readers asked about the rice milk we occasionally drink at home and if there were any homemade options I could recommend. I promised her I would share a simple homemade almond "milk" recipie we use here at home. Almonds are a great source of protein and vitamin E, amoung many other magical qualities this little nut possesses. But if you are looking to replace milk, even though this option is waaay healthier, don´t expect it to have the density of store bought milk.

Breakfast / Desayuno

Sometimes I feel that maybe I´m turning into one of those frieky mamas that feed their kids grass and bore the heck out of them in the process. But, guess what, my kiddos have grown so used to this lifestyle that they enjoy it! Yes people, I said ENJOY! My little G has even got used to asking "...and is this natural?" before starting to eat. So I decided that today I would share their favorite breakfast (and lunch, and dinner... if it were up to G) as well as mine considering how nutritious and EASY it is. E-A-S-Y and fast.

I have glass jars. Many. Glass jars with organic rice, amaranth cereal, organic beans, flour, flax seed, tapioca, oatmeal, nuts, cranberries, amoung other strange and yummy treasures. I put oatmeal, nuts, and any other ingredient G may not be convinced of eating yet, in the blender and blend away. I always try and keep an extra jar with this "flour-y" type of oatmeal handy, just because it´s faster that way. But: If you plan on storing your oatmeal (like muá) than blend only the oatmeal and blend or spread other ingredients on top right before eating.

Tengo tarros de vidrio. Muchos.

Stuff I mix with kiddo´s oatmeal breakfast:
cranberries / raisins
amaranth cereal
nuts
flax seed
and then I sweeten it all with either brown sugar or a homemade syrup made from piloncillo (brown sugar)

Pour some milk on top (we drink rice milk) stir and enjoy!

Simple & Happy Halloween

These are a few pics from our simple, but happy halloween at home. We don´t trick or treat (and candy is a no-no for health reasons, that´s why I bake so much), so I looked into fun, healthy halloween snacks AND baked my kid´s favorite cookies (recipie HERE)!

Fruit salad in these easy to carve oranges (recipie HERE)

I made these cuties to decorate my cookie basket (I know it looks like I glued the eyes and mouth on with my toes and blind folded, but I made them with love... does that make it any better?) (tute HERE)

And, even though it was too dark to take decent pics, I also made little mummy pizzas and ghostly toast!

Once the sun went down and these little girls got hungry, they ate ESQUITES and drank traditional mexican PONCHE

Photobucket

I have my favorite little notebook where I keep recipies I find here and there. I used to have this thing for sitting down and watching The Delicious Miss Dahl with random pieces of paper and a pencil, all ready for inspiration to hit me.

I would then translate my scribbles onto the pages of my grease stained and well loved "cooking notebook". The greasier the page, the more my family enjoys that particular recipie. The chocolate chip cookie recipie is on THE greasiest page in my little book. Meaning: PRETTY DARN GOOD COOKIES. I make a few adjustments and add brown sugar instead of refined sugar, whole grain flour, natural vanilla extract, etc... but they still make me weak in the knees!

Now that the weather is starting to slowly turn I start getting antsy in the baking department. Since we´re putting money into the piggy bank for G´s school camping trip, I tried selling them the other day (something I had never thought of doing before...duh...). They sold out in about 10 minutes!!! So I´m thinking 2 things:

1. I should sell them more often... this camping trip is expensive
2. It might be nice to share the recipie!

2. ¡Podría ser lindo compartir la receta!
